Japan's most beloved green tea, accounting for around 80% of the country's tea production. These distinctive flat leaves are steamed immediately after harvest — a process unique to Japanese green tea — to lock in colour and prevent oxidation, then rolled, shaped, and dried into their characteristic thin cylindrical form.
The result is a cup with a vivid greenish-golden colour and a clean, vegetal character — grassy, sometimes seaweed-like, and gently astringent. Brew with cooler water for a mellower, sweeter cup; hotter water brings out more bitterness and depth.
Our sencha is single origin from Kagoshima Prefecture, in the south of Japan — where the tea-picking season begins each spring as warmth moves northward across the country.
