Tie Guan Yin — Iron Goddess of Mercy — is one of China's most celebrated oolongs, grown in Fujian Province.

Legend has it the tea was gifted by the goddess Guan Yin to a humble farmer who tended her neglected temple. He nurtured the shoot, shared cuttings with his neighbours, and named it after her iron statue.

The processing is famously complex — leaves are sun-withered, cooled, then tossed to trigger partial oxidation before being fixed, rolled, and dried. It's this careful process that gives this oolong its character: somewhere between green and black.
